Whole Wheat Bread Recipe

Since I've had a few people ask for this recipe...and my email isn't working...here you go. This recipe will make 3 loaves.

3 cups very hot tap water
6 Tbsp. oil
6 Tbsp. sugar
1 Tbsp. salt
2 Tbsp. Instant yeast (I use SAF brand)
2 Tbsp. dough enhancer
2 Tbsp. gluten
7 cups wheat flour (approximately)

Put water in bowl. Add oil, sugar, salt, 3 1/2 cups flour and sprinkle yeast, gluten and dough enhancer on top of flour. Mix together well and let sit, covered, for 15 minutes.

Add remaining 3 1/2 cups flour one cup at a time. Continue to add flour until the dough does not stick to the sides of the bowl and they are clean...........that's for all of you lucky ducks that have a kitchen aide!

When all flour is added, continue to mix dough. Stop and check about every minute to check gluten. (This is done by pinching off a small piece of dough and seeing if it will stretch out to the size of a quarter without ripping apart.)

When dough is finished, dump out onto greased surface. Divide dough into 3 equal parts with a knife. Make into loaves and put in pans. Cover and let rise until about 1 - 1 1/2 inches above the pan.

Bake at 350 degrees for 25 - 30 minutes or until nicely browned.


Hope you like it.....I gave Kennedy a sandwich on this bread today and she said, "You gave me wheat bread! Thanks, mom!"

Also, I know you can buy the gluten at Wal Mart, I got both the gluten and dough enhancer at the Preparedness Store here in IF.

Hey Mel, If you are thinking about a mixer, FYI....I have had both a Bosch and a Kitchen Aid plus an English make called a Kenwood. I liked my Kenwood best because I could really pump out the volume in cookies or bread dough. However, getting parts when it broke was a royal pain! And I don't need to make food in such volume any more:) Between the Bosch and Kitchen Aid, I prefer the Bosch because it has a lid and that contains a lot of the mess. They, both, do a wonderful job. You would love either!!! Judy

My Kitchen Aid came with a lid. I never use it though. I just make a mess everywhere. If you do get a Kitchen Aid for making a lot of bread, especially heavy wheat bread, you're going to want to get the more durable one. There's one that can be as low as $200.00 which I got, but it shakes a lot. You're going to want to get the more expensive one.
