The hardest part about this recipe is remembering to put it in the crock pot by 10:00 in the morning. I finally did and it was sooo worth it.
6 boneless skineless chicken thighs
2 cans tomatoes with green chilies
1 package taco seasoning mix
Throw it all in the crock-pot and cook on low 7-9 hours or until chicken is tender and easily shreddable. We had ours last night in tortilla shells as tacos, and then today for lunch as salad with some lettuce, ranch, cucumbers and olives....YUM!
