I Am Like a Real Mom (and Zucchini Casserole Recipe)

Last night I was making dinner (I know, what a miracle....I'll get to that later), my kitchen was a mess, I was trying to help Kennedy with her homework, Matthew was using my bowls and strainers to build "robots" and Hyrum was emptying my cupboards with all my soup cans onto the floor and it occurred to me that I am like a real mom. AAAGGGHHH!! Funny that all this time I thought I was real mom all along and I had no clue! Yes, I realize that I really still have no clue what all motherhood entails, but I think I'm starting to get a glimpse.

For those of you out there who don't have children yet, or whose children have not arrived at the age of 4 yet, please be forgiving of poor moms like me. When you see a totally out-of-control child or a child with a crazy, funky outfit on, please don't think, "My kid will never do (or wear that)" Or if you think it, at least be prepared to someday deal with it yourself.

Okay, anyway, I did make this delicious zucchini casserole last night and if I can make it, so can you. Here's the recipe:

Zucchini Casserole

1/4 c. chopped onion (add more if desired)
1 cup sour cream
1 pkg. Stove Top Dressing
6 cups thick sliced zucchini
1 can cream of chicken soup
1 cup shredded cheese
1 cube butter, melted

Cook onion and zucchini in boiling water for 5 minutes and then drain. Combine soup, sour cream, cheese, salt and pepper to taste. Add drained zucchini to the cheese mixture. Mix well. Combine stuffing mix with butter. Spread 1/2 of mixture in bottom of casserole dish; put zucchini mixture on top of stuffing then top with remaining stuffing. Bake 30 minutes at 350 degrees.

The good news....my whole family liked it. Okay, Hyrum kind of picked around the zucchini, but still, he ate it!
