Easy Skillet Lasagna

I found this recipe one evening when I was desperately searching for something quick and easy to fix for dinner.  I have to say it WAS quick (especially since I already had browned hamburger in the freezer) and easy AND my kids ate it!  I found it on this blog:  Get Off Your Butt and Bake  She has some GREAT recipes.  We tried the pretzel bites last week and they are soooo yummy!


Ingredients:

1 lb ground beef

1 cup chopped onion

1/2 tsp minced garlic

2 to 2 1/2 cups uncooked mini lasagna noodles
*I used macaroni noodles

1 26 oz jar spaghetti sauce

1 1/2 cups water

1 cup low fat cottage cheese (opt)

1 cup mozzarella cheese 1/4 cup grated Parmesan cheese
3/4 cup grated Cheddar cheese


Directions:
In a 12 inch skillet, cook and stir ground beef, onion and garlic until beef is no longer pink. Stir in noodles, spaghetti sauce and water, then bring to a boil. Reduce heat to low, cover and cook 15-20 minutes, or until noodles are tender and liquid is absorbed. Meanwhile, gently stir in cottage cheese (optional) . Top with grated cheeses. Cover and simmer 5 minutes or until cheese is melted.
