A Somewhat Healthy Snack for Kids (or Adults)

No Bake Powerball Oatmeal Cookies
I can't remember which website I found this on, but I will admit Layne and I ate more of these than the kids. 
The easiest way to make these cookies is to use a stand mixer, but you can also enlist your kids' help and prepare the dough by hand. Either way, these oatmeal treats have all the flavors kids love: chocolate, honey, peanut butter, and more.
Ingredients
  • 1 cup peanut butter
  • 1 cup honey
  • 3 cups old fashioned oats
  • 1/2 cup ground flaxseed
  • 1 cup chocolate chips
  • 1 cup any combination of nuts and soft dried fruit (try 1/2 cup coarsely chopped peanuts and 1/4 cup each of raisins and dried cranberries)
Mixing Instructions
  1. In a stand mixer or by hand, combine peanut butter and honey until smooth. Gradually add oats and ground flaxseed.
  2. Add chocolate chips and desired nut and fruit combination and mix gently in.
  3. Roll dough into golf ball size cookies and, for maximum presentation value, put in paper mini muffin cups. You can eat them right away, but they'll be less sticky after a night in the fridge. They freeze well too, layered on wax paper in an airtight container.

This looks really good. I thought about making them today until I read flaxseed. Never in my whole life have I ever bought the stuff. Now I guess I have a reason to. So where in the heck are Halloween costume pics? I just about can't stand the anticipation :)
